Two frugal easy meals that freeze well: Crock Pot Taco Soup  and Cranberry Chicken

Crock Pot Taco Soup

Almost all of the ingredients for this soup came from Target, and the crazy good deals I got there this week.

1 lb ground beef
1 onion, diced
1-16 oz can chili beans
1-16 oz can northern beans
1-11oz can creamed corn
1-8oz can of tomato sauce
1-28oz can of diced tomatoes
1 package taco seasoning
1/2 cup water.

Brown beef with onion, drain excess fat.
Add all ingredients to crock pot (including liquid from beans and corn).  Cook on low 8 hours.

Makes 8 1 c. servings at 87¢ each

This is a great soup to make double and triple batches of, and freeze the cooked soup.  It can be simmered on the stove top as well as the crock pot if you wish.

Cranberry Chicken

This is my absolute favorite freezer recipe.

4 boneless skinless chicken breasts (Target)
1 can cranberry sauce (Amelia's)
8 oz Catalina dressing (Target)
1 package of onion soup mix (Aldi's)

Mix cranberry sauce, dressing, and soup mix together.  Pour over chicken.  Bake at 350 degrees for 30 minutes or until chicken breast is cooked through.

If you wish to freeze, place raw chicken breast in family sized portions in a freezer bag, top with cranberry mixture.  To cook, remove from freezer the night before and place in refrigerator to thaw.  Bake as above, adding 10 minutes if it is still partially frozen. It is wonderful to make double and triple batches to freeze. This sauce works well with pork as well.

This came out to $1.62 per serving when all the ingredients were sourced at rock bottom prices.
