Recipe of the day: Salad Nicoise

About 6 cups of mixed baby leaf lettuces ($1.25, about half the package, Aldi)
4 oz fresh string beans, steamed for about 3 minutes (38¢, Giant)
4 oz potato, boiled till soft, and cut into 8 small wedges (10¢, Amelia's)
16 grape tomatoes (50¢, Aldi)
2 hard cooked eggs, peeled and quartered (20¢
8 kalmata olives (16¢ from Giant olive bar)
1 small can tuna fish, drained (69¢, Aldi)
1 T extra virgin olive oil (unsure of cost... have had my bottle awhile)
1 T lemon juice (I have a huge bottle of "real lemon" in the generic in my fridge... it keeps nearly forever)
1 t. yellow mustard (unsure of cost again).

Serves 2 at $1.33 per serving

Divide lettuce onto 2 serving plates.
Top each with half of the string beans, potato wedges, tomatoes, hard cooked eggs, olives, and tuna.

For dressing, whisk together oil, lemon juice, and mustard.  Pour even amounts over each salad.

Serve and eat.

A more "real" salad Nicoise would be topped with seared tuna steak..a bit pricey for a $25 a week budget, and Nicoise olives.  I can't find Nicoise olives here, but can buy just 8 kalmata olives off of the olive bar at my local grocery store.
